The snow has started falling again in Ohio. Earlier this week, we actually had nice spring-like weather. The temperature dropped again during the weekend. Today, the snow and slush began to pick up in the afternoon. I went for my usual Sunday morning run. Other than going to the gym in the morning, I stayed inside for most of today to avoid the snow. To continue on the early Valentine’s Day celebration, I’m sharing my recipe for berry chicken salad with lemon Dijon dressing. I made this salad as part of an early Valentine’s Day celebration dinner with Kevin yesterday. We had a simple dinner of homemade garlic knots with marinara sauce, hearty pepperoni cast iron pizza, and a berry chicken salad with lemon Dijon dressing. Whenever I have a carbohydrate heavy meal, I like to serve the meal with a side salad. I like the balance of a fresh, light salad with the hearty pizza and garlic knots. In the spirit of Valentine’s Day, I wanted my salad to have redness. Thus, in addition to blueberries and blackberries, I also added some strawberries and raspberries. To round out the rest of my salad, I grilled some chicken, crumbled some blue cheese, and served all of the fresh ingredients over a bed of spinach, lettuce, and arugula blend.

Valentine’s Day is around the corner. February is an exciting month. It’s the month of celebrating love for your partner, family, and friends. Chinese New Year also landed in the month of February this year. Many years ago, when Kevin and I first started dating, we celebrated Valentine’s Day at Cottage Inn in Ann Arbor. We ordered a large pizza to share, a side salad, and garlicky bread sticks. Both of us had such a good time chatting over a delicious, simple meal. We wanted to recreate the experience with a simple Valentine’s Day dinner this year. Since Valentine’s Day is on a weekday this year, Kevin and I decided to celebrate the holiday this weekend. We celebrated with a simple meal of garlic knots with marinara sauce, a fresh salad, and a cast iron pizza. For dessert, we had vegan iced coffee with bits of chocolate chips blended into the drink. You can make a version of my iced coffee here. I am a huge fan of garlic knots and typically make shortcut garlic knots with marinara sauce when I’m short on time. For our Valentine’s Day celebration, I wanted to spend a little extra time by preparing pizza dough the evening before and using the pizza dough to make garlic knots from scratch.

Two weeks ago, I made a scrumptious orange and blueberry loaf cake. The loaf cake was perfect for Sunday brunch and the leftovers worked even better cut into slices and served for breakfast throughout the week. Last weekend, I made another version of my loaf cake using some leftover blueberries, fresh raspberries, and the zest of a whole lemon. The combination of berries and citrus works exceptionally well in desserts. I love using both lemon zest and orange zest in my desserts. If you’ve tried some of my desserts, you can see I like to add in orange zest or lemon zest whenever possible. Lemon zest adds a nice freshness and brightness to both sweet and savory dishes. I’ve added lemon zest to cakes, pasta, and even pizza. If I am unsure of what I want for brunch on Sundays, a loaf cake always works as a great addition to brunch. During brunch this past Sunday, I was craving a fresh, healthy breakfast after my morning run. I had a ripe avocado sitting on my kitchen counter and ended up making avocado toast topped with a fried egg, fresh salsa, and golden raisins. Of course, just avocado toast was not enough for Kevin and I, so I made a mixed berry and lemon loaf cake to serve alongside the avocado toast.

Today is Chinese New Year. There are a few traditions (more like superstitions) for Chinese New Year my family instilled in me since I was a child. Over the years, I often forget about the actions I should avoid on this holiday and end up taking one or more of those actions. A couple years ago, I challenged myself not to get to three strikes. Well, today, I got to two strikes. First, I totally forgot not to wash my hair as washing hair is associated with washing away luck and good fortune. Kevin did remind me not to wash my hair, but out of my autopilot habit, I ended up washing my hair when I got home. That was the first strike. For dinner, I was craving an apple and cherry tomatoes for my salad and ended up cutting a whole apple and halving some cherry tomatoes. Whoops! I should avoid cutting anything on New Year’s day. That was my second strike. I vowed not to get a third strike today. So far, so good.

Happy Chinese New Year eve! The evening before Chinese New Year is often my favorite part of the holiday festivities. The evening before is when families come together from near and afar to have a large family dinner. I try my best to return home for Chinese New Year at least once every two years. Last year, Kevin and I both traveled back to Brooklyn to celebrate with my family. This year, it was only Kevin and I celebrating together. I don’t consider myself a very superstitious person, but my parents definitely are. They would instruct us not to sweep, eat congee, or wash our clothes on Chinese New Year day. In the days leading up to Chinese New Year, my dad would buy some nice floral blooms to decorate the home. My mom would thoroughly clean the home from top to bottom. My brothers and I would write down what we want for the family togetherness dinner on the night before Chinese New Year. On the morning of, we start off with a vegetarian meal, usually some form of vegetable and noodles.

It’s almost Chinese New Year. 2019 is the year of the pig. Growing up in New York, I love going to Chinatown in Manhattan during Chinese New Year. The streets are filled with red and gold decorations, firecrackers, and lion dancers. The restaurants are packed with families and friends connecting over good food. I usually try to avoid crowds whenever possible, but Chinese New Year in Chinatown is one of those days when I make an exception. My family always made a togetherness dinner for the entire family the evening before Chinese New Year. My immediate family would gather over the dinner table to share in eating longevity noodles, prosperous steamed fish, and some sweet soup dumplings. Besides the absolutely delightful food, we would eat other lucky treats and collect red envelopes from our close relatives. All of those traditions and memories are forever etched in my mind.

It has been a while since I had potatoes. I usually have potatoes at least once a week, but I haven’t picked up potatoes in over two months. I haven’t even picked up my favorite frozen fries and tater tots from the supermarket in weeks. I can’t believe I haven’t had potatoes in nearly two months considering potatoes are an absolute weakness of mine. My drought from eating potatoes changed this week. After my work out earlier this week, I was craving some starchy potato goodness. I ended up washing a few russet potatoes, cutting them up into wedges, drizzling on some olive oil, generously seasoning both sides of the wedges, and then roasting them in the oven. As the potatoes were roasting in the oven, the most wonderful smell filled my kitchen.

Last Friday, I started my first day of a leadership certificate program. I was very excited to start a new class and to meet new people who are passionate about the public and nonprofit sector. We spent the morning going over the program, what to expect, and took professional photos. At around noon, we had a lunch break. I didn’t bring lunch with me, so I ended up heading across the street to the student union to pick up lunch. I browsed through the different food options, and ended up picking up an Asian chicken salad with peanut dressing. The salad had tons of spinach, carrots, and radicchio, a grilled chicken breast, and a side of peanut dressing.

I ate a ton of pretzels growing up. When I was a child, my family would take my brothers and I to Kings Plaza Mall at least once a month. We would browse through different retail stores, work up an appetite, and head straight for the Cookie House & Pretzels on the first floor of the mall for a treat. My dad and brothers always headed towards the line for cookies. They would buy ½ a pound of macadamia nut and white chocolate chip cookies and ½ a pound of chocolate chip cookies to snack on throughout their shopping trip. I always headed straight for the line to get pretzels.

I woke up this morning feeling mostly tired, but I was also ready to tackle the day. Sunday mornings (during the winter) are usually when I head to the gym to squeeze in a morning run. My runs during the winter feel much tougher than my runs during the spring or summer. For some reason, I feel especially energized during the spring and summer to work out, but I have the complete opposite feelings during the winter. Winter makes me want to curl up with a fleece blanket into my favorite corner of my couch, watch movies, and veg out. Cooking, baking and the occasional bathroom break are the only activities which keep me from sitting in my corner of the couch all day long.
