Quiches are part of my rotation of Sunday brunch recipes. I like to make a quiche when I don’t know what to make for breakfast or brunch. Quiches are basically frittatas without the crust. They always look impressive and are always delicious served at any temperature. One of the easiest quiches you can make is a bacon and caramelized onion quiche. The bacon and onion together lend a nice saltiness, crispiness, smokiness, and sweetness to the quiche. Luckily, I had saved one piece of my savory cheddar pie dough in the refrigerator. I rolled out the dough onto my tart pan and used it as the crust for my quiche. The best part about a quiche is after you combine everything, you just place it carefully in the oven and then you’ll have a delicious meal in less than an hour. You can make some drinks while the quiche is baking away in the oven.
Bacon and Caramelized Onion Quiche
Pie Dough:
· Savory cheddar pie dough recipe
Filling:
· 6 strips of bacon, sliced into small pieces
· 1 onion, sliced into half-moon slices
· 6 large eggs
· 4 ounces of sharp white cheddar, grated
· ¼ cup heavy cream
· ¼ teaspoon kosher salt
· ¼ teaspoon freshly cracked black pepper
Directions:
1) Preheat oven to 350°F. Unroll the pie dough onto a tart pan. Press the dough to fit firmly onto the tart pan.
2) Heat a skillet on medium heat. Once hot, cook the thinly sliced onion until caramelized, about 10 minutes. If the onion starts to stick to the pan, add a tablespoon of water, and continue cooking. Repeat with other tablespoons of water, if needed. Remove caramelized onion from skillet. Set aside.
3) Add the bacon pieces to the pan. Cook the bacon until crispy, about 5 minutes. Scoop the bacon onto the same plate as the caramelized onion. Let the bacon and onion cool for 5 minutes.
4) In a large bowl, whisk together the eggs, cheese, cream, salt, and pepper. Add the bacon and onion into the egg mixture.
5) Pour the whisked mixture into the tart pan with the pie dough.
6) Carefully place the tart pan in the center rack of the oven. Bake for 35-45 minutes.
Takeaways: Cooking the bacon and onions ahead of time is a must to help the quiche achieve the best flavor. Quiches are very versatile so feel free to swap in different smoked meats and vegetables.
