Thanksgiving weekend is coming towards an end. I spent the entire long weekend indulging in warm, comforting food. I still have containers of leftovers sitting in my refrigerator. Instead of just packing up the leftovers in separate containers, I divided all of the leftovers evenly across several meal containers to bring to work for lunch throughout the week. Today, I was craving a lighter, fruit-based breakfast to start my day. I had some fresh blueberries sitting in my refrigerator and some frozen blueberries and strawberries sitting in my freezer. I decided to combine the fresh and frozen berries with the juice of an orange in a blender to create a smoothie bowl. I also added a few pieces of chopped pecans for added crunch. The smoothie bowl provided just the right amount of fruit to kick start my day. The only item left to check off my to do list for this weekend is to finish my holiday shopping for family and friends. Kevin and I actually started our shopping right after Thanksgiving dinner on Thursday night. It was also a good way to fit in some form of exercise after a heavy meal. On Friday, we looked for deals online and did some online shopping. I’ve purchased most of my holiday gifts, but the hardest gifts to get are usually the gifts for my parents. Hopefully, the smoothie bowl will give me the energy this morning to continue brainstorming ideas for holiday gifts for my parents.
Mixed Berry Smoothie Bowl:
· ¼ cup frozen blueberries
· 6-8 frozen strawberries
· Juice of one orange
· ½ tablespoon pecans
· Fresh blueberries for serving
· Fresh orange slices for serving
Directions:
1) In a blender, add the blueberries, strawberries, and juice of one orange. Blend all of the fruits together until smooth. Pour into a bowl. Top with pecans, fresh blueberries, and orange slices. Serve with a spoon.
Takeaways: A smoothie bowl is basically a smoothie served in a bowl with a spoon instead of a cup with a straw. I like to make smoothie bowls when I want to detox after a heavy meal. You can add any fruits to the smoothie bowl. Some of my other favorite combinations include bananas, blueberries, and orange juice or strawberries, bananas, and orange juice.
